✨ snow fungus - silver ear - beauty mushroom, 🍄
This delicate, cloud-like mushroom has been used in TCM for centuries.
It's mild, slightly sweet and it’s perfect in a soup.
Here's Frizela's favorite snow fungus soup recipe by @thewoksoflife
Snow Fungus & Asian Pear Soup
Ingredients:
• 25g dried snow fungus, rehydrated overnight
• 10 cups water
• 1 large Asian pear (300–400g)
• 40g rock sugar (or to taste)
• 15g dried goji berries (about 2 tbsp)
• 20g dried Chinese red dates (jujubes, about ¼ cup)
-After soaking overnight, trim the tough yellow root and tear the fungus into small pieces.
-Add snow fungus and water to a pot. Bring to a boil, then reduce to medium-low. Cover and simmer 30 min.
-Peel and cube the pear, discard the core, and add to the pot. Simmer another 30 min.
-Add rock sugar, goji berries, and dates. Adjust sweetness to taste.
-Simmer on low, covered, for 1–2 hours until syrupy and a light amber color.
Prep time is 8 hrs (mostly hands-off soaking). Active prep is just 5 minutes! You can get these ingredients at @rainbow_grocery in SF.
